After eating out quite a bit...Amanda and I decided to eat in tonight. I didn't have a whole lot on hand, but I knew I could use up my sweet potato pappardelle from Pappardelle's Pasta, tempeh, and spinach. From there I found a pesto recipe and tempeh marinade to work off of, and voila! This is an extremely filling, flavorful, and healthy meal which is easy to whip up.
The marinade ingredients + the pesto ingredients may not seem like they go together, but trust me they do! Plus, feel free to make as many substitutions as needed; this recipe is very forgiving. Words cannot describe how elated I am that my first attempt to make pizza from scratch was successful. This recipe is Vegan, delicious, and healthy. What's not to love?! So go ahead and give it a try.
Although it took a bit of time to come together, this really was easy to make and sooo worth it! And while you're waiting for your dough to rise...squash to roast...or pizza to cook, go ahead and participate in my poll! Butternut Squash Pesto Pizza Creamy, subtly squashy....is that an appetizing adjective? I don't know, it is to me; and how do you like that alliteration?! Aaanywhooo this recipe was the winner of this week's poll, and I was so thrilled because I wanted to enjoy it for dinner before eating squash in the spring gets any weirder... Is that weird to you? I don't know. I made Sweet Potato Muffins tonight too...it felt so wrong, yet so right. No verdict yet on whether or not I'll be sharing that one! I may have to tweak it a bit...
Back to vegan Mac N Cheese! This Oh She Glows recipe is perfect just the way it is, no changes here. I am simply informing you of the goodness Angela Liddon has yet again created. Annnd providing a second opinion on how delish this is! I will be completely honest, if you're looking for a processed, unnatural, sodium-saturated mac n' cheese, you're in the wrong place. Juuuust try it. You know you want to. I never thought it would be possibly to recreate a creamy, decadant, "cheesy" dish without animal products until Oh She Glows opened my eyes to nutritional yeast. This little wonder has me excited to make other "cheese" dishes in the near future, but for now, I'll stick with this one...Quick and Easy Vegan Alfredo from Oh She Glows.
Sidenote: You're going to see OSG on here a LOT because her blog is the whole reason I got hooked on food blogs and veganism. Check out her blog please, it is wonderful. I have tried this recipe on some of the biggest, non-vegan pasta critics, and they all love this. I suppose that means you'll have to try it too. I would be lying if I said it had a strong resemblance to actual alfredo...but that doesn't make it any less delicious! |
